Two versions of a caraway-centric, celebratory Scandanavian spirit!

Ingredients: Organic corn, malted rye, caraway seed, heavily-seeded rye bread. Unaged additionally includes dill. 42% Alcohol by Volume, 750 ML.

Tasting Notes: ISCO’s unaged Aquavit gives off aromas of earthy cumin and warm rye, giving way to subtle candied lemon and caraway flavors followed by a lush, verdant dill that lingers on the palate. For the aged version, aromas of rye, caraway, vanilla and caramel are followed by cozy cumin and candied fennel on the palate.

Cocktails: While Aquavit can be (very) happily enjoyed sipped straight, you can use it to spike your hot cider, try it in a riff on a Collins in place of the gin or a Mule in place of the vodka.  For the aged version, try it in an espresso martini, an Old Fashioned or a Negroni!

Production Method: This spirit’s spicy character comes from our rye mash, which we created by fermenting a beautiful organic corn alongside a bit of malted rye. After an initial run through our still, we layered in complex flavors derived from both caraway seed and multiple loaves of a custom-made heavily seeded rye from a local family-run bakery in an additional distillation. Finally, we infused the resulting distillate with fresh local dill.

To create our aged aquavit, we let the spirit rest in thrice-used barrels that first held our Blue Velvet Blue Corn Bourbon, followed by our Patina Barrel Aged Gin, and finally by the Aquavit. After 1 year, we unbarrelled and bottled this unique, sensuous spirit! Enjoy!!
